Chicken Fingers on a Stick

Chicken Fingers on a Stick

Breaded chicken is a good bet for finicky eaters, and this variation, grilled and served on a skewer, makes it even more appealing to kids. Add your child’s favorite dipping sauce, and there might not be any left for the adults!

Ingredients

4 boneless, skinless chicken breast halves, pounded 1/2 to 3/4 inch thick
Salt and pepper
24 (10-inch) bamboo skewers, soaked in water for 30 minutes

3 tablespoons peanut or vegetable oil
2 tablespoons barbecue sauce
1 1/4 cups plain dried bread crumbs

Instructions

Cut each chicken breast lengthwise into 1/2-inch-wide strips and sprinkle with salt and pepper. Fold the chicken strips slightly and weave them onto the skewers.
Prepare a charcoal fire or set a gas grill to medium-high, close the lid, and heat until hot — about 10 to 15 minutes.
In a small bowl, stir together the oil and the barbecue sauce. Spread the bread crumbs on a sheet of waxed paper. Lightly brush the sauce mixture over the chicken strips and then roll them in the bread crumbs.
Grill the chicken fingers uncovered until they’re no longer pink inside, about 2 to 4 minutes per side on a gas grill.
Serve with the dipping sauce of your choice. Serves 6 to 8. A FAMILY FUN MAGAZINE RECIPE!

Chef Boyardee Recipe Party!

We recently hosted a Chef Boyardee recipe party for a bunch of our friends. It was great! The kids got to cook and design their over meal using a semi-homemade method.

Our family already LOVE Chef Boyardee products so I knew the kids would eat up the recipe we concocted! This was one of the most fun get togethers’ we have had in awhile…the kids loved all of the chef products.

First we chose to take the can of Beefaroni and dress it up.

We took three cans of Beefaroni and added it to one package of cream cheese.

We then added all of it to a pan of cooked sausage for a zesty zing.

After all of that we then added cheese and melted it on top.

We toasted up some taco shells and let the kids make their own BEEF-A-RACOS!

On the very top of the BEEF-A-RACOS we added goldfish crackers for an extra crunch. SO YUMMY!!

All of the kids loved it and it was creamy, beefy, crunchy, and zesty all in one BITE!

The kids loved the new meal we served!!!

Mixing the sausage and the Chef Boyardee together….YUMMY!

PROUD CHEF KORBYN!!!

We bought Balloons and Spongebob paper whistles for the kids to make this a fun party with great food.

Most of my close friends know that my husband and I have separated and it is one of the hardest decisions him and I ever made. We don’t want to hurt our children but we only get one life to live and we strongly feel we will be better off good friends and the being the best parents to our children. The great part is that we are working really hard to do what is best for the children and their futures!

I have so many supportive friends ones that I know wish I could make it work and others that are behind be no matter what a choose. I have been struggling with the transition…different people come into your life and you never know if it is for a long time or a short time. What some people don’t know is that I am a strong woman and I feel I have a lot to offer my friends in my life. I will do anything for my friends and want my friends to live the best life they can.

If you have someone in your life that is special, you connect with, respect, and have a wonderful time with…. treat that person well! Life is too short!

Give that person the benefit of the doubt and search your soul as to why GOD brought you together! You may be missing something! I strongly believe God has a reason for why he brings two people together…it may be to a stepping stone for another relationship or he may have a bigger plan. Open you heart and see what Gods plan is..you may be surprise!! I think there are many special people out there and I am excited to meet more of you. Sometimes you are just meant to be great friends or maybe more..you won’t know if you never fully give the relationship a chance. ENJOY YOUR LIFE AND THE PEOPLE IN IT!! I ENJOY YOU!!!!

Chicken WonTon Salad

credits: Savvy Girl

Chicken Won Ton Salad

2 heads leaf lettuce, washed and torn

1 small bunch green onion

¼ cup toasted sesame seeds

¾ cup toasted slivered almonds

1 small package won tons (cut into strips and deep fried)*

3-4 chicken breasts – cooked and shredded

Dressing:

½ cup canola oil

½ cup rice vinegar (white wine vinegar okay)

½ cup sugar

2 tsp. salt

Mix together in glass jar and refrigerate for a few hours or overnight.

In large bowl, combine lettuce, onion, seeds, nuts and chicken and toss together. Just prior to serving, add won tons and dressing and toss again. (I do not use all of the dressing so go slow and depending on desire, add more dressing.)

*Note: This salad is wonderful for a large party, you might want to deep fry the won tons a day before so your house doesn’t smell like a deep fryer. Can store won tons at room temperature in an air tight container.
