Apple Crisp! Getting ready for Fall weather!

You can almost smell the amazing aroma that fills a kitchen with this wonderful recipe!
Apple Crisp

Topping:
1 cup butter (cold) (I use 3/4 cup)
1 cup brown sugar
1 cup flour
1 cup oatmeal
1/4 tsp. baking powder
Filling:
9-10 apples, peeled and sliced (enough to fill 9×13 dish)
1/2 cup sugar
1/4 tsp. salt
1 tsp. cinnamon
Topping: In large bowl, mix all ingredients until butter is just broken up and the ingredients are mixed together. Mixture should crumbly.
Filling: Place apples into large baking dish (9×13). Mix in separate bowl: sugar, salt and cinnamon and then sprinkle apples. Spoon topping over top. Bake at 350 degrees for 45 minutes or until golden brown.

Chef Boyardee "Almost Homemade Recipes"

Most of my readers know that I work a full time job and run my blog part-time once my kiddos go to bed! Some nights I am so tired that it is hard to cook a good healthy meal from scratch! I was so excited to hear about Chef Boyardee and the new recipes that they came up with to help make dinner easier. These new recipes are “ALMOST HOMEMADE” and the great part is that they can be made in less than 30 minutes. I would love nothing better than to serve my kids fresh from the farm organic food every night. We live in the real world with real times schedules and picky eaters! Checking out their new site made my own creative juices start flowing! I love mixing ingredients to make a totally new dish that my family will enjoy! The first recipe we chose to make was the Cheeseburger-roni! The kids looked at it as if I was serving them poison. Then I told them to try one bite and if they didn’t like it they would have to eat it. The all took a bite and as soon as Nevaeh was on board the other two followed with a “YUMMY!” The recipe below is exactly what we made and it was a breeze. We can give 5 thumbs up from our family!!


CHEESEBURGER-RONI

Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 2 can (15 oz each) Chef Boyardee® Beefaroni®
  • 1 can (14.5 oz each) Hunt’s® Diced Tomatoes, drained
  • 1/4 cup Hunt’s® Tomato Ketchup
  • 2 tablespoons finely chopped dill pickle
  • 1 tablespoon prepared yellow mustard
  • 1/4 cup shredded reduced fat Cheddar cheese
  • 1 hamburger bun with sesame seeds, torn into small pieces

Directions

  1. Preheat broiler. Spray 10-inch oven-safe skillet with cooking spray; heat over medium-high heat.
  2. Add beefaroni, drained tomatoes, ketchup, pickle and mustard to skillet. Heat 5 minutes or until hot, stirring occasionally.
  3. Top with cheese. Lightly spray torn bun with cooking spray and place on top of cheese. Place skillet under broiler 2 to 3 minutes or until bun pieces are browned and crisp.

Cook’s Tips

No hamburger bun on hand for the topping? Two slices of bread may be substituted. And dill pickle relish could be substituted for the chopped dill pickle. The beefaroni mixture could be served in hamburger buns, topped with American cheese for ‘cheeseburger joes’. Get the kids involved with preparation by letting them add ingredients to the skillet and help stir the dish. They also could tear up the hamburger bun. To help give your family even more of the good stuff they need, you can use Whole Grain Beefaroni instead of Regular Beefaroni.


RAVIOLI LASAGNA

Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 1 cup frozen loose cut leaf spinach
  • 2 can (15 oz each) Chef Boyardee® Beef Ravioli
  • 1 can (14.5 oz each) Hunt’s® Diced Tomatoes, drained well
  • 1-1/2 teaspoons dried Italian seasoning
  • 1 cup 1% low-fat cottage cheese
  • 1/2 teaspoon ground black pepper
  • 1 cup shredded Italian blend cheese

Directions

  1. Preheat oven to 375°F. Spray 8×8-inch glass baking dish with cooking spray. Place spinach in microwave-safe bowl. Cover with plastic wrap and microwave on HIGH 2 minutes; squeeze spinach dry.
  2. Combine ravioli, drained tomatoes and Italian seasoning in medium microwave-safe bowl. Cover with plastic wrap and microwave on HIGH 3 to 4 minutes or until mixture is hot. Combine cottage cheese, spinach and black pepper in small bowl.
  3. Place half of ravioli mixture in bottom of baking dish. Top with half of cottage cheese mixture and 1/2 cup shredded cheese. Repeat layers. Bake 15 minutes or until cheese is hot and bubbly.

Cook’s Tips

Involve the kids with the preparation. They can stir together the cottage cheese mixture and help layer the ingredients in the dish. Trying to please a picky eater? Substitute the spinach with another vegetable the family enjoys. You also could place all of the spinach mixture between the layers of ravioli or leave the spinach out completely.

Add bacon to anything and it will fly off the table. That’s what a caterer once told me and I believe it. Certainly applies here.

Whether you’re planning a cookout this weekend or cooking indoors (rain predicted here in Texas), grill up a few of these sizzling treats for a quick appetizer or serve as an entree. I can’t think of a better way to celebrate the Fourth of July than with a big plate of these spicy and cheesy, smoky and crispy chicken nuggets.

If you don’t like hot, leave out the jalapenos or skimp a bit. I definitely prefer fresh jalapenos over the canned or pickled ones traditionally used with nachos. They are milder and prettier too.

Chicken spread with cream cheese and jalapenos, rolled and wrapped with bacon, then grilled.
Ingredients
  • 8 chicken tenders, flattened and cut in two
  • 3-ounce package softened cream cheese
  • 1 jalapeno pepper, seeded and finely chopped
  • 8 slices bacon, cut in half
Directions
  1. Dab 1/2 teaspoon (more or less) of cream cheese on top of each chicken tender. Sprinkle a scant 1/4 teaspoon of peppers over cream cheese. Fold or roll chicken to enclose cream cheese mixture. Wrap each roll with one piece of bacon and secure with a toothpick.
  2. Grill until bacon is brown and crispy on both sides.
Notes

Be sure to wear plastic gloves when handling fresh jalapenos. The oil will attach itself to your hands and is not easily washed away. An inadvertent swipe of the hand close to your eyes could be an unforgettable experience.

For reference, if you are substituting for the chicken tenders (i.e. dark meat, large pieces of chicken breast, game meat), the size of the tenders I used were 5-6 inches long and 2-3 inches wide before flattening and cutting in half.

Try flattening meat inside a zip-lock bag as pictured above. No flying pieces, no contamination on your cutting board from the chicken, and cleanup is super easy.

homemade cleaners

This was easier than I thought it would be.

One of Betsy’s goals for the year was to ditch some of our standard cleaners that we use around the house and make them! Honestly, I was a bit skeptical about this project mainly because I wasn’t sure that homemade cleaners would really get the job done.

And my lovely wife is a bit of a neat freak so there’s no way she would use something that didn’t perform well.

So a couple of weekends ago she went out and bought a few staple ingredients and some empty spray bottles and we spent a few minutes mixing up four different homemade cleaners that have since replaced 90% of the cleaners we use around the house.

For the last few weeks we’ve been using them now and I’ve been so impressed by how well they are working, I thought I’d share them all with you in case any of you are interested in ditching the chemicals.

The Cost of Cleaning. The thing about homemade cleaners is that the initial start-up costs might seem a bit high. A tiny bottle of lavender oil (.5 ounces), for example, will run you $7-$8. But the thing to remember is that for each batch of cleaning solution, you’ll be using literally just a few drops of oil.

I would guess we spent around $30 on our homemade cleaning supplies for these four solutions, but now we have enough supplies to last us years. By the time we run out of lavender oil, for example, our cost per bottle for these cleaners will be reduces to cents.

Basic stuff.

Really Clean Cleaning. After using these solutions for a few weeks, what I’m most impressed with is their cleaning power. They really work. Not only do they work, but I get the strange impression that they are even cleaner than the standard products.

When you clean a counter with the all-purpose cleaner it’s squeaky clean and the whole room smells awesome, not chemical at all. I hate to say this, but having these easily accessible actually makes me like cleaning. DON’T TELL MY WIFE.

My ultimate decision to post on these solutions was just because they worked surprisingly well.

The Basics. Betsy and I did some research on books for home cleaning solutions and I would recommend these two to anyone who wants to learn more:

- Green Clean including vinegar, citrus fruits and baking soda (I guess unavailable for now on Amazon)

- Homemade: How to Make 100′s of Everyday Products

As far as ingredients go, a good number of ingredients you will probably have on hand already at home. Things like vinegar, baking soda, citrus, etc. Those are easy.

The tricky stuff are these items:

Some of these are a bit expensive.

Most of the recipes involve castile soap and a few drops of essential oils. These are the pricey items and the ones that you won’t need to buy very often even if you make a ton of these solutions.

For the recipes I’m giving in this post, you’ll need the below items. You can find all of these at your local supermarket or health food store or you can grab them from Amazon. I’ve included links to the amazon pages.

- Castile Soap – An all-natural soap that’s surprisingly strong. A few drops go a long way. We like the lavender scent, but they have others available.

- Lavender Oil – A natural anti-bacterial oil that smells wonderful.

- Tea Tree Oil – A natural oil that cleanses and disinfects.

- Washing Soda – Sodium Carbonate which is just a strong base that works great as a laundry detergent. It has a million uses around the house.

Mixing the Solutions. If you’re going to do this, definitely buy new, clean plastic bottles. Don’t use old bottles as the trace chemicals in them might react badly.

Also, I’d recommend getting some labels because while they are all different, these solutions all look a bit similar.

The Recipes!

Let’s start with an easy one.

Lavender Anti-Bacterial Spray

- 1 Cup water
- 20 drops lavender essential oil

Easy right?! It’s smells great and lavender is very high in linalool which is naturally antibacterial.

The next recipe is the one that we use the most which is the all-purpose cleaner. It’s our daily cleaner now on everything from counters to floors.

One note about this one is that it will bubble A LOT (think high school science volcano) so make sure you leave plenty of room in your bottle for an eruption and mix it over the sink just in case.

All-Purpose Cleaner (Watch out for a reaction! It will bubble a lot.)

- 3 Tablespoons vinegar
- 1/2 Teaspoon washing soda
- 1/2 Teaspoon castile soap
- 2 Cups hot water

I think you can see how little of each ingredient is used for a batch.

The next formula is the one we use on the stove or any place that accumulates a lot of oil or grease.

Grease Cutter (Note that if you have a good eye, I messed up the label on this one for my bottles.)

- 2 Cups water
- 1/4 Cup castile soap
- 10 drops lavender oil

And finally the strongest of the solutions that we made which is for really scrubbing hard to clean areas like bathroom sinks and mildewed tubs.

Bath, Sink, Tile Cleaner (Again, watch out for some bubbling.)
NOTE: Ideally, mix this one in a SQUIRT bottle, not a SPRAY bottle. It’s pretty thick and almost a paste.

- 2/3 Cup baking soda
- 1/2 Cup castile soap
- 2 Tablespoons vinegar
- 1/2 Cup water
- A few drops of Tea Tree oil

Labels definitely help.

Like I said, we’ve been testing these out for the last few weeks now and I really love all of them. My favorite is the all-purpose cleaner and the antibacterial spray which just leaves everything really clean and smells fantastic without being overpowering.

If you’re looking to cut out some chemicals from your cleaning products and save some money (in the long term), you should try these out!

Chili Corn Bread Salad Recipe

Chile Corn Bread Salad

Chili Cornbread Salad
(Southern Living)

1 (6 oz.) package Mexican Cornbread Mix
1 (4.5-oz) can chopped green chilis (optional)
1 (1 oz) package Ranch dressing mix
1 (8 oz.) container light sour cream
1 cup light mayonnaise
2 (16 oz.) cans pinto beans, rinsed and drained
1 green bell pepper, chopped
2 (15 oz.) cans whole kernel corn, drained
3 tomatoes, chopped
10 bacon slices cooked and crumbled
2 cups (8 oz.) shredded cheddar cheese
1 cup sliced green onions
Lettuce leaves

PREPARE cornbread mix according to package directions, adding chopped green chilies, if preferred; cool.
COMBINE dressing mix, sour cream and mayonnaise

CRUMBLE half of cornbread into a large bowl. Top with half of each of pinto beans, sour cream mixture, chopped bell pepper, and next 5 ingredients. Repeat layers, starting with cornbread and ending with green onions.
COVER and chill 2 hours. Serve salad in lettuce-lined bowls.
**Serving a salsa on the side is a nice addition.

TRIFLE RECIPE

Trifle! – Start with Dessert First

This Recipe is amazing and if you want something beautiful and to Wow your guests, try this one. If you have a Crate n’ Barrel outlet near you, you can get a Trifle bowl for $17.00.

  • 1 Can Sweetened Condensed Milk
  • 1 1/2 cups cold Milk — combine until smooth
  • Add in 1 Large package Vanilla Instant Pudding — Mix well until it thickens like instant pudding
  • Add one 8 oz Cool Whip
  • Any cake of your choice cut up into small sqares, white, vanilla, chocolate, confetti, angel food cake
  • Multiple Kinds of fruit, strawberries, blueberries, kiwi, banana, raspberries – you pick your favorites

In your trifle bowl :
Start your layers — Line the bottom of the bowl with fruit, pudding layer, cake layer and repeat, until you have reached the top! Be creative and have fun with this. (Thank you to Joni – my sister in law for sharing such a special treat with me!)

GRANOLA RECIPE

Old Fashioned Homemade Granola

This recipe has been in my family for as long as I can remember. I hope you try it and love it as much as we do. It has to be some of the best granola I have ever had!

GRANOLA

8 cups rolled oats
6 cups wheaties cereal
2 cups wheat germ
2 tsp. salt
2 cups brown sugar
1 lb. raisins ( I use 1-2 cups)

Mix ingredients in large bowl

Combine and heat in small saucepan until warm:

½ cup honey
1 cup warm water
1 cup oil
3 tsp. vanilla

Stir liquid into dry ingredients. Pour onto 2 cookie sheets. Bake 2 hours at 200 degrees. Stir and rotate after 1st hour. Serve with yogurt and fruit!

ENGLISH TOFFEE RECIPE

Old Fashioned English Toffee

English Toffee
Ready for a sweet addiction?

2 large (6 ounce each) Hershey ® Milk Chocolate Bars, grind or chop
12 ounces slivered almonds, grind or chop

*The chocolate and almonds should be medium-fine texture. Use food processor, if available

1 lb. butter (2 cups, no substitutes)
2 cups white sugar

Spread a thin layer of the ground almonds in a jelly roll pan. Follow with a thin layer of ground chocolate. Do not mix layers.

Make candy as follows: (Be sure to use a candy thermometer)

In a heavy saucepan, melt together sugar and butter. Stir to mix thoroughly. Continue to cook candy over medium heat. Stirring very frequently (constantly at the last) to maintain a smooth texture. Cook until the temperature reaches between 295°F and 300°F (I shoot for about 297°F). The mixture will have a deep golden color and sometimes a slightly burned smell. Do not undercook the candy or it will be tacky.

Pour the candy over the chocolate and gently spread it to the edges of the pan. Sprinkle remainder of the chocolate over the candy. Let it melt for a minute or two and then spread it around on the toffee. Follow with the rest of the almonds. Cool the pan on the counter (or in the refrigerator once it is not so hot) until the candy is set. Then break it into pieces (can use a knife to crack off chunks and then either break the chunks up by hand or use a knife.) Store in refrigerator.

**This recipe can be successfully halved – use a 7” by 11” pan.

NO BAKE COOKIE RECIPE

An Old Favorite — No Bake Cookies

Friday Favorite of course! I know it’s two foods in a week but I have been craving these childhood favorites all week long since Alison made them last week (Alison is our SGC food editor) and so I broke down and made them this afternoon and realized why I have loved them my entire life — entirely Chocolaty, gooey and so yummy.

1/2 C. Cocoa
1/2 C. Evaporated Milk
1/2 C. Butter
2 C. Sugar
1/2 tsp. Vanilla
3 C. Oats
1/2 Cup coconut

Combine cocoa, milk, butter and sugar in a saucepan. Cook over med. heat stirring constantly until it reaches a full boil. Continue boiling for one minute — at one minute take off the stove and mix in the vanilla, oats and coconut. Mix well until coated and then drop by teaspoonfuls onto waxed paper. Let stand until firm

GOURMET APPLE TOFFEE DIP

Gourmet Apple Toffee Dip

Many of us may be trying to redirect our attention to being more conscientious in our food choices.
There is nothing better than a plate of fresh fruit! If you are craving a sweet treat and want to indulge with an apple or banana, give this dip a try. It will hit the spot and your children may even consider eating fruit with a little dollup of this sweet treat on the side. This can be a great option for teenagers who are coming to “hang out,” dessert with friends, or a fun valentine treat.

Gourmet Apple Dip

8 oz. cream cheese – softened

½ cup granulated sugar

½ cup brown sugar

2 Skor bars or ¼ to ½ cup Heath Toffee pieces

Mix together cream cheese, granulated sugar and brown sugar.

Crunch up candy bars & stir with spoon. Serve with sliced apples,

bananas, and/or berries.
